Fried Fruit Salad Sandwich????
Posted: January 13th, 2010 | Author: Emily Brown | Filed under: Uncategorized | Tags: carbs, Elvis, fruit, Kevin Leachman, long run, potassium, protein, sandwich | 1 Comment »It’s a mouthful, but for Kevin Leachman, one of our team captains for the Rock ‘n’ Roll San Antonio Marathon, his “Fried Fruit Salad” sandwich fuels his recovery after a long run. “My kids helped me come up with it once when I was making an Elvis sandwich after a run,” says Kevin. “We call it the Fried Fruit Salad Sandwich — good protein, carbs and potassium for recovery after a long run.” 
- 2 slices of 100 percent whole wheat bread
- 2 tbsp. almond butter
- 1/2 banana sliced
- orange marmalade (or other tropical flavor)
- coconut flakes
- butter
*Spread almond butter on one slice of bread. Spread marmalade on the other slice of bread. Place the banana slices on the almond butter. Melt pat of butter in frying pan on medium heat. Place bread with almond butter on melted butter (with almond butter facing up). Spread the butter on plain side of bread with marmalade. Place on top of bread with butter facing up. Flip sandwich when browned. Cook other side until browned.
