Di’s LALA bars

Posted: November 19th, 2009 | Author: Emily Brown | Filed under: nutrition | Tags: , , | No Comments »

pb150046Diantha Velasquez, from Dexter, N.Y., shared her favorite snack to fuel her marathon training… She’s big about whole, simple foods that are free of any of that “added stuff.” And, while her five kids call them “LALA bars,” Di thinks they are more like almond bliss. “They taste like almond joys to me so I call them “almond bliss” cookies!” says Di, who just recently conquered the San Antonio Marathon.

“DI’s LALA bars”

1 cup almonds (soaked)
2 cups dates (soaked)
1 cup coconut (she uses unsweetened and unsulphered to keep it raw)
2 heaping tablespoons cacoa powder (she uses “raw” but you can substitute carob or regular cacoa powder)

*blend almonds and dates in a food processor.
*add coconut
*add cacoa powder
*blend enough to mix.
*spread in a glass pan.
*cut bars and into desired size…they are freezer and fridge friendly

Mmmmmmm….The next time she makes them she is going to try placing the mixture in cupcake liners for an easy “package” without the work of cutting. Send your favorite recipes to (Enable Javascript to see the email address)

ING NYC Marathon Race Report

pb010002 More than 65 NF Endurance runners tackled five boroughs on Sunday, Nov. 1, 2009, wearing neon for the 40th running of the NYC Marathon. Collectively our runners hapb010011ve raised $166,911 and they aren’t done! (Visit the team site to read more about their efforts). A special thank you to Matt Garvic and John McCarthy for leading the team as captains. Our race day coaching crew included Steve Kendra, Kim Norman, Chad Leathers, Tracy Draper, Malcolm McDonald and Emily Brown. Check out our team photos on our Facebook fan page.

Vincent “Vinny” Squillace, a student at Boston University, shared a powerful experience he had on the course. Around mile 8 in Brooklyn, a woman came up to him while he was running. She said, “Oh my God, I want a picture. My son has NF!” Vinny shared with her about the Foundation’s mission — to find a cure for NF through research and why he was running. “You are what the world needs,” she said to Vinny. Vinny shared that with the Endurance team because it applies to all of us. “We are what the world needs,” said Vinny. “I am so proud of how far we’ve come.”

It was Peter Orlando’s first marathon. “The pasta party set me up for success,” said Peter. “I am so thankful for the NF Endurance team to allow me the chance to run for such a great cause. Thank you to everyone that was cheering me on the sidelines; that is really what gave me the push to the end. Whoever was at the last 400m really gave me an adrenaline rush. This was an unforgettable weekend and I’m already planning my next marathon.”

But, perhaps Hugh McLoughlin says it best: “My body aches, no, hurts, but my heart beats strong from the incredible amount of money raised to help solve the puzzle.”

NF Endurance has more than 65 runners in the 2009 ING NYC Marathon. The 40th running of the ING NYC Marathon takes place on Sunday, Nov. 1, 2009. Look for NF Endurance in bright neon on the course (just remember to set your clocks back one hour; the time change starts just after Halloween concludes on Saturday). Track your runners online on the New York Road Runners website. If you are in town we would love to have you cheer on our runners. Be warned: it’s crowded. Sometimes the crowds can be six to eight people deep. We are encouraging fans to be at the 12-13 mile mark in Queens and mile 18. Check out the spectator guide on the New York Road Runners Web site. We will meet as a team before the race at the Hudson hotel (356 W. 58th) at 6:30 a.m. Early enough to grab a cup of coffee, take a group photo and make it down to the Staten Island Ferry.

FALL BACK
Daylight savings time ends at 2:00 a.m. on Nov. 1, 2009. So, whether you are trying to get to the NYC starting line or meeting your Sunday a.m. running group, make sure to set your clocks back one hour before you hit the sack.
