Di’s LALA bars

Diantha Velasquez, from Dexter, N.Y., shared her favorite snack to fuel her marathon training… She’s big about whole, simple foods that are free of any of that “added stuff.” And, while her five kids call them “LALA bars,” Di thinks they are more like almond bliss. “They taste like almond joys to me so I call them “almond bliss” cookies!” says Di, who just recently conquered the San Antonio Marathon.
“DI’s LALA bars”
1 cup almonds (soaked)
2 cups dates (soaked)
1 cup coconut (she uses unsweetened and unsulphered to keep it raw)
2 heaping tablespoons cacoa powder (she uses “raw” but you can substitute carob or regular cacoa powder)
*blend almonds and dates in a food processor.
*add coconut
*add cacoa powder
*blend enough to mix.
*spread in a glass pan.
*cut bars and into desired size…they are freezer and fridge friendly
