NF Endurance Around the World

In addition to the Antarctica Marathon on March 7, 2010, NF Endurance participated in the Little Rock Marathon in Little Rock, Ark., and the Coastal Run for NF in Australia. Led by Julia Szulerowski, the Coastal Run Run for NF, which was about 21 kilometers (almost the distance of a half marathon), skirted the coast of Minnamurra to Werri Lagoon in Australia. It’s what Szulerowski called, a “Bad Ass” run — no start gun, no water stations, no finishing medals.

About 20 people showed up for Szulerowski’s race and six ran the whole way. Szulerowski and her daughter both have NF. “We have endured some of the more complicated issues of NF, but at this time are doing well,” said Szulerowski. In 2004, Szulerowski was diagnosed with high grade dysplasia of the esophagus, a complication of NF.  “It was removed and so was part of my stomach, making running long distance harder because it is hard to keep food and liquids down without a sphincter.” For more information on Szulerowski’s story and efforts to NF, click here.

Quinoa -The “Wheaties” of Inca Warriors

What is quinoa? Why the reference to Inca Warriors?

Quinoa (pronounced KEEN-wa) is an ancient grain that has been consumed for centuries. Ancient Inca civilization called it the “mother grain” because it was a major protein source for their empire. In fact, Inca warriors held this whole grain in high esteem for the stamina it provided.

In recent times, quinoa has been embraced by vegetarians looking for alternative sources of protein in their diets. With a mild taste that is likely to appeal to many tastes, quinoa is packed with complete protein, meaning that it supplies the body with all of the essential amino acids. Even better, quinoa cooks in 15 minutes, considerably faster than many other whole grains. You can find quinoa in the natural foods section of your supermarket and in the bulk food bins.

Try mixing the basic quinoa recipe below with your favorite blend of sautéed vegetables and cheese (I like to blend sautéed zucchini, corn, and Romano cheese with quinoa). If you want to go fancy, you could even stuff whole roasted bell peppers, Portobello mushrooms, or zucchini with quinoa.

Basic Quinoa
2 cups water
½ teaspoon salt
1 cup quinoa

In a covered pot, bring 2 cups of water and ½ a teaspoon of salt to a boil. Add quinoa, cover the pot, and lower the heat to low. Simmer for 15 minutes, until the quinoa is soft and the water is absorbed.

“How INCREDIBLE! What a weekend! I have been to many a marathon, but I can honestly say I have never seen that much NEON on a race course! Sadly, ol Drewf was not able to make it to the pasta dinner, but it was due to exhaustion from an AMAZING excursion with some great friends who came and picked him up for a day at the mall and a movie (something, selfishly I wouldn’t trade for the world).  It was also the first time I’ve felt like I was getting my brother back.”
